■ It is a poorly digestible organic acid found abundantly in honey, royal jelly, wine, and brewed vinegar.
■ About 70% of the organic acids in honey are gluconic acid.
■ It has a mild and rounded sour taste; if the sourness of citric acid is defined as 100, that of gluconic acid is about 30.
■ Gluconic acid is the only organic acid known to function as a prebiotic ingredient.
